  • 1 unbaked 9-inch pie crust homemade or store-bought
  • 1/2 cup unsalted butter melted
  • 1/2 cup granulated sugar
  • 1/4 cup heavy cream
  • 3 eggs large
  • 1/2 cup honey light or clover
  • 1 tsp vanilla extract
  • 1/2 tsp sea salt plus extra for sprinkling

Method
 

  1. Preheat oven to 350°F (175°C). Place pie crust in a 9-inch pie pan.
  2. Whisk together melted butter, sugar, honey, and heavy cream until smooth.
  3. Beat in eggs one at a time, then stir in vanilla extract and sea salt.
  4. Pour mixture into pie crust and smooth the top.
  5. Bake 35–40 minutes until custard is set but slightly jiggly in the center.
  6. Cool at room temperature for 1 hour, then chill in the refrigerator for 1 hour.
  7. Sprinkle lightly with sea salt before serving. Optionally drizzle extra honey or top with whipped cream.

Notes

Avoid overbaking for silky custard; store covered in fridge for up to 3 days.
