Ingredients
  

Macaron Shells
  • 1 cup powdered sugar
  • 0.75 cup almond flour
  • 2 egg whites
  • 0.25 cup granulated sugar
  • 1 drop red gel food coloring
Sugar Cookie Buttercream
  • 0.5 cup butter softened
  • 1.5 cups powdered sugar
  • 1 tsp vanilla extract
  • 0.25 tsp almond extract optional
  • 2 tbsp milk
Decorations
  • 0.25 cup royal icing or melted white chocolate
  • 1 edible black marker

Method
 

  1. Sift almond flour and powdered sugar.
  2. Whip egg whites to stiff peaks, adding sugar gradually.
  3. Fold meringue into dry ingredients (macaronage).
  4. Pipe Santa shapes and rest until dry.
  5. Bake at 300°F for 14–16 minutes.
  6. Prepare sugar cookie buttercream.
  7. Decorate with royal icing and edible marker.
  8. Fill and sandwich shells.

Notes

Macarons improve after 24 hours in the refrigerator.
