Method
- Sift almond flour and powdered sugar.
- Whip egg whites to stiff peaks, adding sugar gradually.
- Fold meringue into dry ingredients (macaronage).
- Pipe Santa shapes and rest until dry.
- Bake at 300°F for 14–16 minutes.
- Prepare sugar cookie buttercream.
- Decorate with royal icing and edible marker.
- Fill and sandwich shells.
Notes
Macarons improve after 24 hours in the refrigerator.
