Ingredients
  

Chicken
  • 2 chicken breasts
  • 1 tbsp olive oil
  • 1 tsp chili powder
  • 1 tsp cumin
  • 0.5 tsp paprika
  • to taste salt and pepper
Salad
  • 4 cups lettuce chopped
  • 1 cup tomatoes halved
  • 1 cup corn
  • 1 cup black beans
  • 1 avocado diced
  • 0.25 red onion
Dressing
  • 0.25 cup yogurt
  • 2 tbsp mayonnaise
  • 1 tbsp lime juice
  • 1 tsp honey

Equipment

  • Grill or skillet

Method
 

  1. Season and cook chicken until done, then slice.
  2. Combine salad ingredients in a bowl.
  3. Whisk dressing ingredients together.
  4. Top salad with chicken and drizzle dressing.
  5. Toss and serve.

Notes

Add dressing just before serving to keep salad fresh.
