Ingredients
  

  • 1 tbsp olive oil
  • 12 oz smoked sausage sliced
  • 1 onion diced
  • 2 bell peppers diced
  • 3 cloves garlic minced
  • 1 cup long-grain white rice uncooked
  • 2 cups chicken broth
  • 1 tsp smoked paprika
  • 0.5 tsp dried oregano
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Large skillet with lid
  • Cutting board
  • Knife
  • Wooden spoon

Method
 

  1. Heat olive oil in a large skillet over medium heat and brown sausage on both sides.
  2. Remove sausage and sauté onion and bell peppers until softened.
  3. Add garlic and cook until fragrant.
  4. Stir in rice and toast briefly.
  5. Add seasonings, broth, and return sausage to skillet.
  6. Cover and simmer until rice is tender.
  7. Rest, fluff, garnish, and serve.

Notes

Use any smoked or chicken sausage. Adjust seasoning to taste.
