Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 onion diced
  • 4 cloves garlic minced
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
Vegetables & Liquid
  • 2 sweet potatoes peeled and cubed
  • 14.5 oz diced tomatoes canned
  • 4 cups vegetable broth
  • 1 tsp salt
  • 0.5 tsp black pepper
Finishing Touches
  • 0.5 cup cream or coconut milk optional
  • 0.25 cup Parmesan cheese grated

Equipment

  • Large pot or Dutch oven
  • Immersion blender

Method
 

  1. Heat olive oil and sauté onion until soft.
  2. Add garlic and herbs; cook until fragrant.
  3. Stir in sweet potatoes and tomatoes.
  4. Add broth and seasonings, then simmer until tender.
  5. Blend partially for desired texture.
  6. Stir in cream and Parmesan.
  7. Serve hot with basil and olive oil.

Blend only part of the soup for authentic Italian texture.
