Ingredients
  

Cookie Dough
  • 1.5 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.25 tsp salt
  • 0.25 tsp cayenne pepper
  • 0.5 cup unsalted butter chilled and cubed
  • 1 cup sharp cheddar cheese grated
  • 0.5 cup Parmesan cheese grated
  • 1 tbsp fresh rosemary finely chopped
  • 1 tbsp fresh thyme finely chopped
  • 1 large egg beaten
  • 2-3 tbsp cold water

Method
 

  1. Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
  2. Whisk flour, baking powder, salt, and cayenne in a bowl.
  3. Cut in butter until mixture resembles coarse crumbs.
  4. Stir in cheeses and herbs.
  5. Add egg and water to form dough; chill for 30 minutes.
  6. Roll out dough and cut into snowflake shapes.
  7. Bake 10-12 minutes until golden.
  8. Cool on wire rack and serve.

Notes

Store in airtight container for up to a week. Freeze unbaked for later use.
