- Peel and shred the potatoes using a box grater or food processor.
- Place shredded potatoes in a kitchen towel and squeeze out as much moisture as possible.
- Mix potatoes, cheddar cheese, eggs, green onions, garlic powder, onion powder, salt, black pepper, melted butter, and parsley in a large bowl.
- Preheat and grease the waffle maker with cooking spray or butter.
- Add a generous scoop of the potato mixture to the waffle maker and spread evenly.
- Cook for 8–10 minutes until golden brown and crispy.
- Carefully remove and repeat with remaining mixture.
- Serve hot with sour cream and fresh chives.
Notes
For extra crispy hash browns, always squeeze excess moisture from the potatoes before cooking.
