Ingredients
  

Salad
  • 2 cups cooked chicken breast sliced
  • 3 cups shredded green cabbage
  • 1 cup shredded purple cabbage
  • 1 cup shredded carrots
  • 1 cup mandarin oranges segments
  • 0.5 cup sliced almonds
  • 2 tbsp sesame seeds
  • 3 green onions sliced
Dressing
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp orange juice
  • 1 tbsp honey
  • 1 tbsp sesame oil
  • 1 tbsp olive oil
  • 1 tbsp fresh ginger grated
  • 1 clove garlic minced

Method
 

  1. Prepare chicken by slicing cooked chicken breast into thin strips.
  2. In a large bowl combine cabbage, carrots, mandarin oranges, and green onions.
  3. In a separate bowl whisk soy sauce, rice vinegar, orange juice, honey, sesame oil, olive oil, ginger, and garlic.
  4. Add chicken to the salad mixture.
  5. Sprinkle almonds and sesame seeds on top.
  6. Drizzle dressing over salad and toss gently to coat.
  7. Serve immediately for the best texture.

Notes

For meal prep, store dressing separately and add just before serving.
