Method
- Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
- Place cubed sweet potatoes on sheet pan, drizzle with olive oil, and season with salt and pepper.
- Whisk together olive oil, lemon juice, lemon zest, garlic, paprika, oregano, salt, and pepper.
- Toss chicken with the lemon marinade until coated.
- Place chicken on sheet pan beside sweet potatoes and add lemon slices.
- Roast for 25–30 minutes until chicken reaches 165°F and sweet potatoes are tender.
- Blend avocado, Greek yogurt, olive oil, lemon juice, garlic, parsley, cilantro, water, salt, and pepper until smooth.
- Serve roasted chicken and sweet potatoes with avocado goddess sauce drizzled on top.
Notes
For extra crispiness, broil the sheet pan for the final 2 minutes of cooking.
