Ingredients
  

Chicken and Vegetables
  • 1.5 lb boneless chicken thighs
  • 2 sweet potatoes peeled and cubed
  • 3 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 3 cloves garlic minced
  • 1 tsp paprika
  • 1 tsp oregano
  • 0.75 tsp salt
  • 0.5 tsp black pepper
  • 1 lemon sliced
Avocado Goddess Sauce
  • 1 avocado ripe
  • 0.5 cup Greek yogurt
  • 2 tbsp olive oil
  • 2 tbsp lemon juice
  • 1 clove garlic
  • 0.25 cup parsley
  • 0.25 cup cilantro
  • 2 tbsp water for thinning
  • 0.25 tsp salt
  • 0.25 tsp black pepper

Equipment

Method
 

  1. Preheat oven to 400°F (200°C) and line a sheet pan with parchment paper.
  2. Place cubed sweet potatoes on sheet pan, drizzle with olive oil, and season with salt and pepper.
  3. Whisk together olive oil, lemon juice, lemon zest, garlic, paprika, oregano, salt, and pepper.
  4. Toss chicken with the lemon marinade until coated.
  5. Place chicken on sheet pan beside sweet potatoes and add lemon slices.
  6. Roast for 25–30 minutes until chicken reaches 165°F and sweet potatoes are tender.
  7. Blend avocado, Greek yogurt, olive oil, lemon juice, garlic, parsley, cilantro, water, salt, and pepper until smooth.
  8. Serve roasted chicken and sweet potatoes with avocado goddess sauce drizzled on top.

Notes

For extra crispiness, broil the sheet pan for the final 2 minutes of cooking.
