Ingredients
  

Main Ingredients
  • 4 bone-in pork chops about 1-inch thick
  • 1.5 lbs Yukon gold potatoes cut into 1-inch chunks
  • 1 large onion sliced
  • 3 cloves garlic minced
  • 2 tbsp olive oil
Seasonings
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • 1 tsp paprika
  • salt and black pepper to taste
  • fresh parsley chopped, for garnish

Method
 

  1. Preheat oven to 425°F (220°C). Line a sheet pan with parchment or foil.
  2. Toss potatoes, onion, and garlic with 1 tbsp olive oil, thyme, rosemary, paprika, salt, and pepper.
  3. Spread on sheet pan and roast for 15 minutes.
  4. Pat pork chops dry, rub with remaining oil, and season with salt, pepper, and paprika.
  5. Add pork chops to the pan and roast 20-25 minutes until pork reaches 145°F.
  6. Rest for 5 minutes, garnish with parsley, and serve.

Notes

For crispier potatoes, parboil them first. Adjust seasonings to taste.
