Method
- Preheat oven to 425°F (220°C). Line a sheet pan with parchment or foil.
- Toss potatoes, onion, and garlic with 1 tbsp olive oil, thyme, rosemary, paprika, salt, and pepper.
- Spread on sheet pan and roast for 15 minutes.
- Pat pork chops dry, rub with remaining oil, and season with salt, pepper, and paprika.
- Add pork chops to the pan and roast 20-25 minutes until pork reaches 145°F.
- Rest for 5 minutes, garnish with parsley, and serve.
Notes
For crispier potatoes, parboil them first. Adjust seasonings to taste.
