Ingredients
  

  • 4 salmon fillets
  • 1.5 lb baby potatoes halved
  • 2 cups broccoli florets
  • 1 bell pepper sliced
  • 0.5 red onion sliced
  • 3 tbsp olive oil
  • 2 cloves garlic minced
  • 1 lemon juiced and sliced
  • salt and pepper to taste

Method
 

  1. Roast seasoned potatoes for 15 minutes.
  2. Add vegetables and salmon, then continue roasting.
  3. Finish with lemon and herbs before serving.

Notes

Do not overcrowd the pan for best roasting results.
