Ingredients
  

Fajita Base
  • 1.5 lb large shrimp peeled and deveined
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 green bell pepper sliced
  • 1 large red onion sliced
  • 2 tbsp olive oil
  • 1 lime juiced
Fajita Seasoning
  • 2 tsp chili powder
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp garlic powder
  • 0.5 tsp dried oregano
  • 0.5 tsp salt
  • 0.5 tsp black pepper

Method
 

  1. Preheat oven to 425°F (220°C) and prepare a sheet pan.
  2. Mix all fajita seasoning ingredients in a small bowl.
  3. Place peppers, onions, and shrimp on the sheet pan.
  4. Drizzle with olive oil and lime juice, then sprinkle with seasoning.
  5. Toss gently and spread into a single even layer.
  6. Roast for 10–12 minutes until shrimp are pink and vegetables are tender.
  7. Garnish with fresh cilantro and serve with warm tortillas.

Notes

Do not overcook shrimp—remove from the oven as soon as they turn pink and opaque for the best texture.
