- Preheat oven to 425°F (220°C) and prepare a sheet pan.
- Mix all fajita seasoning ingredients in a small bowl.
- Place peppers, onions, and shrimp on the sheet pan.
- Drizzle with olive oil and lime juice, then sprinkle with seasoning.
- Toss gently and spread into a single even layer.
- Roast for 10–12 minutes until shrimp are pink and vegetables are tender.
- Garnish with fresh cilantro and serve with warm tortillas.
Notes
Do not overcook shrimp—remove from the oven as soon as they turn pink and opaque for the best texture.
