Ingredients
  

Stir-Fry
  • 1 lb shrimp peeled and deveined
  • 1 lb asparagus cut into 2-inch pieces
  • 8 oz mushrooms sliced
  • 3 tbsp oil neutral
  • 3 cloves garlic minced
  • 1 tbsp ginger grated
  • 1 small onion sliced, optional
Sauce
  • 3 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tsp sesame oil
  • 0.25 cup broth chicken or vegetable
  • 1 tbsp cornstarch slurry 1 tbsp cornstarch + 1 tbsp water

Equipment

  • Mixing bowls
  • Baking sheet
  • Wire rack
  • Hand mixer or stand mixer

Method
 

  1. Pat shrimp dry and season lightly. Mix sauce ingredients in a small bowl.
  2. Heat 1 tbsp oil in a wok and cook shrimp until pink; remove.
  3. Add remaining oil and cook asparagus for 3 minutes.
  4. Add mushrooms and onion; cook until tender-crisp.
  5. Stir in garlic and ginger for 30 seconds.
  6. Pour in sauce, add slurry, and simmer until thickened.
  7. Return shrimp to pan and toss to combine.

Notes

Cook quickly over high heat for best texture. Do not overcook shrimp.
