  • 1 lb cooked shrimp peeled, deveined, chopped
  • 3 ripe avocados diced
  • 4 medium tomatoes diced (or 2 cups cherry)
  • 0.5 red onion finely chopped
  • 0.25 cup fresh cilantro chopped
  • 1 jalapeño seeded and chopped, optional
Dressing
  • Juice of 3 limes about 1/4 cup
  • 3 tablespoons extra-virgin olive oil
  • 2 cloves garlic minced
  • salt and black pepper to taste
  • 0.5 teaspoon cumin optional

Equipment

Method
 

  1. Prepare shrimp if needed: chop into bite-sized pieces.
  2. In a large bowl, add shrimp, diced avocados, tomatoes, red onion, cilantro, and jalapeño.
  3. Whisk lime juice, olive oil, garlic, salt, pepper, and optional spices in a small bowl.
  4. Pour dressing over salad and gently toss to combine.
  5. Adjust seasoning and let rest 5-10 minutes before serving.
