Ingredients
  

Salad
  • 5-6 cups cubed seedless watermelon
  • 2 large English cucumbers sliced
  • 1 cup crumbled feta cheese
  • 0.25 cup fresh mint leaves chopped
  • 2-3 tbsp extra-virgin olive oil
  • juice of 1-2 limes about 3 tbsp
  • salt and black pepper to taste

Method
 

  1. Cube the watermelon and slice the cucumbers.
  2. Combine watermelon, cucumber, and chopped mint in a large bowl.
  3. Whisk olive oil, lime juice, salt, and pepper for dressing.
  4. Drizzle dressing over salad and toss gently.
  5. Top with crumbled feta and serve immediately.

Notes

Best served fresh; add feta last to maintain texture. Adjust lime for more tang.
