Ingredients
  

Cookie Dough
  • 1 tbsp unsalted butter softened
  • 3 tbsp creamy peanut butter
  • 0.25 cup light brown sugar packed
  • 0.5 tsp vanilla extract
  • 1 egg yolk large
  • 3 tbsp all-purpose flour
  • 0.125 tsp baking soda
  • 0.125 tsp salt
  • granulated sugar optional for rolling

Method
 

  1. Preheat oven to 350°F (175°C) and line a small baking sheet with parchment paper.
  2. In a small bowl, mix softened butter, peanut butter, and brown sugar until creamy.
  3. Stir in vanilla and egg yolk until combined.
  4. Add flour, baking soda, and salt; mix into a soft dough.
  5. Form into 1 large or 2 small balls, roll in sugar if desired, place on sheet, and flatten with fork in crisscross pattern.
  6. Bake 10-12 minutes until edges are golden and center soft.
  7. Cool 5 minutes on sheet, then enjoy warm.

Notes

For microwave version: Place shaped dough in ramekin and microwave 45-60 seconds. Use standard peanut butter for best results. Cookies best fresh but store up to 3 days.
