- Season brisket with salt, pepper, smoked paprika, and garlic powder.
- Heat olive oil in a skillet and sear brisket 4–5 minutes per side.
- Cook onions in the same pan until softened, then add garlic.
- Stir in tomato paste, beef broth, Worcestershire sauce, herbs, and brown sugar.
- Place brisket in slow cooker with carrots and celery.
- Pour braising liquid over brisket.
- Cook on low for 8–9 hours until fork tender.
- Rest brisket 10 minutes, slice against the grain, and serve with sauce.
