Ingredients
  

Brisket
  • 3-4 lb beef brisket
  • 2 tbsp olive oil
  • 2 tsp salt
  • 1 tsp black pepper
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
Vegetables
  • 1 onion sliced
  • 4 cloves garlic minced
  • 3 carrots chopped
  • 2 celery stalks chopped
Braising Liquid
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 1 tbsp brown sugar
  • 1 tsp thyme
  • 1 tsp rosemary
  • 1 bay leaf

Method
 

  1. Season brisket with salt, pepper, smoked paprika, and garlic powder.
  2. Heat olive oil in a skillet and sear brisket 4–5 minutes per side.
  3. Cook onions in the same pan until softened, then add garlic.
  4. Stir in tomato paste, beef broth, Worcestershire sauce, herbs, and brown sugar.
  5. Place brisket in slow cooker with carrots and celery.
  6. Pour braising liquid over brisket.
  7. Cook on low for 8–9 hours until fork tender.
  8. Rest brisket 10 minutes, slice against the grain, and serve with sauce.

Leftovers taste even better the next day as flavors continue to develop.
