Ingredients
  

  • 3 lb chuck roast
  • 1.5 lb baby potatoes
  • 4 carrots chunked
  • 1 yellow onion sliced
  • 4 cloves garlic smashed
  • 2 cups beef broth
  • 2 tbsp Worcestershire sauce
  • 2 tbsp tomato paste
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 2 sprigs fresh rosemary
  • 2 sprigs fresh thyme

Method
 

  1. Season chuck roast generously with salt and pepper.
  2. Add vegetables to slow cooker and place roast on top.
  3. Whisk broth, Worcestershire, and tomato paste and pour over roast.
  4. Add herbs, cover, and cook on LOW 8–9 hours.
  5. Rest briefly, then slice or shred and serve.

Notes

Best cooked on LOW for maximum tenderness.
