Ingredients
  

Chicken & Sauce
  • 3 lb chicken thighs bone-in, skinless
  • 6 slices bacon chopped
  • 8 oz mushrooms sliced
  • 1 cup pearl onions
  • 3 cloves garlic minced
  • 2 tbsp tomato paste
  • 2 tbsp all-purpose flour
  • 2 cups dry red wine
  • 1 cup chicken broth
  • 4 sprigs fresh thyme
  • 1 bay leaf

Equipment

  • Slow cooker
  • Large skillet
  • Wooden spoon

Method
 

  1. Cook bacon until crispy and transfer to slow cooker.
  2. Brown chicken and add to slow cooker.
  3. Sauté vegetables, add flour, wine, and broth.
  4. Pour mixture over chicken, add herbs.
  5. Cook until chicken is tender and sauce is rich.

Notes

Serve with mashed potatoes or crusty bread.
