Ingredients
  

Base Soup
  • 1 lb Italian sausage mild or hot
  • 1 yellow onion diced
  • 3 cloves garlic minced
  • 3 carrots sliced
  • 2 celery stalks diced
  • 4 cups chicken broth
  • 1 can diced tomatoes 14.5 oz, optional
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 1 tsp Italian seasoning
  • 0.25 tsp crushed red pepper flakes optional
Finishing Ingredients
  • 20 oz cheese tortellini fresh or frozen
  • 2 cups spinach fresh
  • 1 cup heavy cream
  • 0.5 cup parmesan cheese grated

Equipment

  • Slow cooker

Method
 

  1. Brown sausage in a skillet until cooked through.
  2. Add sausage, onion, garlic, carrots, celery, broth, tomatoes, and spices to slow cooker.
  3. Cook on LOW 6 hours or HIGH 3–4 hours.
  4. Add tortellini and cook 20–30 minutes until tender.
  5. Stir in cream, spinach, and parmesan and cook 5 minutes.

Notes

Add more broth if soup becomes too thick.
