Ingredients
  

  • 4 boneless chicken breasts
  • 1 cup dried figs chopped
  • 4 oz goat cheese crumbled
  • 1 small onion sliced
  • 3 cloves garlic minced
  • 0.5 cup chicken broth
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey
  • 1 tsp fresh thyme leaves
  • salt to taste
  • pepper to taste
  • 1 tsp olive oil optional for sautéing

Method
 

  1. Optional: Sauté onions and garlic in olive oil for 2–3 minutes until fragrant.
  2. Place chicken in slow cooker and top with onions, garlic, and figs.
  3. Pour in chicken broth, balsamic vinegar, and honey. Sprinkle thyme, salt, and pepper.
  4. Cover and cook on LOW for 4–5 hours or HIGH for 2–3 hours until chicken is tender.
  5. 10 minutes before serving, sprinkle crumbled goat cheese on top and cover to melt slightly.
  6. Serve chicken with fig-onion sauce, garnish with extra goat cheese and thyme.

Notes

Chicken can be seared before slow cooking for deeper flavor. Adjust sweetness to taste.
