- Cook macaroni in salted water according to package directions. Drain and set aside.
- Melt butter in a saucepan over medium heat. Add garlic and cook briefly.
- Whisk in flour and cook for 1 minute.
- Slowly whisk in milk and cook until thickened.
- Reduce heat and stir in smoked gouda and cheddar until melted.
- Season with smoked paprika, salt, and pepper.
- Add macaroni and stir until coated. Serve warm.
Notes
For extra richness, replace ½ cup milk with heavy cream.
