Ingredients
  

Mac & Cheese
  • 12 oz elbow macaroni
  • 3 tbsp unsalted butter
  • 3 tbsp all-purpose flour
  • 2 cups whole milk warm
  • 1.5 cups smoked gouda cheese shredded
  • 1 cup sharp cheddar cheese shredded
  • 1 clove garlic minced
  • 0.5 tsp smoked paprika
  • salt and black pepper to taste

Method
 

  1. Cook macaroni in salted water according to package directions. Drain and set aside.
  2. Melt butter in a saucepan over medium heat. Add garlic and cook briefly.
  3. Whisk in flour and cook for 1 minute.
  4. Slowly whisk in milk and cook until thickened.
  5. Reduce heat and stir in smoked gouda and cheddar until melted.
  6. Season with smoked paprika, salt, and pepper.
  7. Add macaroni and stir until coated. Serve warm.

Notes

For extra richness, replace ½ cup milk with heavy cream.
