Cookies
  • 1.5 cups all-purpose flour
  • 0.5 tsp baking soda
  • 0.25 tsp salt
  • 0.5 tsp ground cinnamon optional
  • 0.5 cup unsalted butter softened
  • 0.5 cup brown sugar packed
  • 0.25 cup granulated sugar
  • 1 egg large
  • 1 tsp vanilla extract
  • 1 cup mashed bananas 2–3 ripe bananas
  • 0.5 cup chocolate chips optional
  • 0.25 cup walnuts or pecans optional

Method
 

  1. Preheat oven and line baking sheets.
  2. Whisk dry ingredients together.
  3. Cream butter and sugars, add egg and vanilla.
  4. Stir in mashed bananas.
  5. Fold in dry ingredients, chocolate chips, and nuts.
  6. Scoop onto sheets and bake 10–12 minutes.
  7. Cool slightly, then transfer to wire rack.

Notes

Do not overbake for best chewy texture.
