Ingredients
  

Donut Batter
  • 1.75 cups cake flour or AP flour + cornstarch
  • 2 tsp baking powder
  • 0.25 tsp baking soda
  • 0.5 tsp salt
  • 2 tbsp matcha powder sifted
  • 0.75 cup granulated sugar
  • 1 large egg room temp
  • 0.75 cup buttermilk room temp
  • 0.25 cup unsalted butter melted
  • 2 tbsp neutral oil
  • 2 tsp vanilla extract
  • 0.5 cup pistachios finely chopped
Matcha Glaze
  • 1.5 cups powdered sugar sifted
  • 1-2 tsp matcha powder sifted
  • 3-4 tbsp milk
  • 0.5 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C). Grease donut pan.
  2. Whisk dry ingredients: flour, baking powder, soda, salt, matcha.
  3. Whisk sugar and egg, then add buttermilk, butter, oil, vanilla.
  4. Combine wet and dry, fold in pistachios gently. Do not overmix.
  5. Pipe or spoon batter into pan, filling ¾ full.
  6. Bake 10–13 minutes until springy. Cool 5 min in pan, then on rack.
  7. Whisk glaze ingredients to thick pourable consistency.
  8. Dip cooled donuts in glaze, top with pistachios. Let set.

Notes

Use high-quality matcha for best color and flavor. Adjust glaze matcha for desired green intensity. Best eaten fresh.
