Ingredients
  

  • 200 g spaghetti
  • 2 cups fresh spinach
  • 0.5 cup sun-dried tomatoes chopped
  • 0.5 cup heavy cream
  • 2 cloves garlic minced
  • 0.25 cup parmesan cheese grated

Method
 

  1. Cook spaghetti according to package instructions. Reserve 1/2 cup pasta water.
  2. Sauté garlic in olive oil, add sun-dried tomatoes and cook 2–3 minutes.
  3. Add heavy cream, season, and simmer 2–3 minutes.
  4. Add spinach and cook until wilted.
  5. Toss spaghetti with sauce, using reserved pasta water as needed.
  6. Top with parmesan and serve immediately.

Notes

Use oil-packed sun-dried tomatoes for richer flavor.
