Ingredients
  

Tart Crust
  • 1.5 cups all-purpose flour
  • 0.5 cup powdered sugar
  • 0.25 tsp salt
  • 0.75 cup unsalted butter cold, cubed
  • 1 egg yolk
Cranberry Curd
  • 12 oz fresh cranberries
  • 1 cup granulated sugar
  • 1 tbsp orange zest
  • 2 tbsp lemon juice
  • 2 eggs
  • 2 egg yolks
  • 0.5 cup unsalted butter

Equipment

  • Tart pan with removable bottom
  • Saucepan
  • Blender
  • Fine mesh sieve

Method
 

  1. Prepare and blind bake the tart crust.
  2. Cook cranberries with sugar and citrus.
  3. Blend and strain cranberry mixture.
  4. Cook curd with eggs until thickened.
  5. Stir in butter and pour into crust.
  6. Chill until set and garnish with sparkling cranberries.

Notes

Add sparkling cranberries just before serving for best texture.
