Ingredients
  

Pasta & Chicken
  • 12 oz penne pasta
  • 2 chicken breasts bite-sized pieces
  • 2 tbsp olive oil
Creamy Spinach Sauce
  • 1 small onion finely chopped
  • 4 cloves garlic minced
  • 5 oz fresh spinach
  • 8 oz cream cheese softened
  • 1 cup chicken broth
  • 1 cup mozzarella cheese shredded
  • 0.5 cup parmesan cheese grated
  • 1 tsp Italian seasoning
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.25 tsp red pepper flakes optional

Equipment

  • Large skillet
  • Pasta pot
  • Wooden spoon
  • Colander

Method
 

  1. Cook pasta according to package instructions, drain, and set aside.
  2. Heat olive oil in a large skillet and cook chicken until golden and fully cooked. Set aside.
  3. Sauté onion until soft, then add garlic and cook briefly.
  4. Stir in cream cheese and chicken broth until smooth and creamy.
  5. Add mozzarella and parmesan cheese and stir until melted.
  6. Add spinach and cook until wilted.
  7. Return chicken to the skillet and mix well.
  8. Add pasta and toss until fully coated in sauce. Simmer briefly and serve.

Notes

Best served immediately while creamy. Add extra broth when reheating to restore sauce texture.
