Ingredients
  

Soup Base
  • 2 tbsp olive oil
  • 1 onion chopped
  • 2 carrots diced
  • 2 celery stalks diced
  • 3 cloves garlic minced
  • 1 cup lentils brown or green
  • 1 can butter beans drained and rinsed
  • 6 cups vegetable broth
  • 4 cups spinach fresh

Method
 

  1. Sauté onion, carrots, and celery in olive oil until softened.
  2. Add garlic and spices; cook until fragrant.
  3. Stir in lentils, broth, and bay leaf. Simmer until lentils are tender.
  4. Add butter beans and spinach. Cook until spinach wilts.
  5. Season to taste and serve warm.

Notes

Add lemon juice before serving for extra brightness.
