Ingredients
  

Salmon
  • 4 salmon fillets skin removed
  • 1 tsp paprika
  • 0.5 tsp salt
  • 0.5 tsp black pepper
Spinach Filling
  • 2 cups fresh spinach chopped
  • 4 oz cream cheese softened
  • 0.25 cup parmesan cheese grated
  • 0.5 cup mozzarella cheese shredded
  • 2 cloves garlic minced
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 0.5 tsp onion powder

Method
 

  1. Preheat oven to 375°F (190°C). Lightly grease a baking dish.
  2. Cut a pocket into each salmon fillet without slicing all the way through.
  3. Heat olive oil in a skillet and sauté garlic for 30 seconds. Add spinach and cook until wilted.
  4. In a bowl, mix cream cheese, parmesan, mozzarella, onion powder, and lemon juice.
  5. Stir cooked spinach mixture into the cheese filling until combined.
  6. Season salmon with paprika, salt, and black pepper.
  7. Stuff each salmon fillet with the spinach filling and place in baking dish.
  8. Bake for 18–22 minutes until salmon flakes easily. Garnish and serve.

Notes

Use thick salmon fillets for easier stuffing and best presentation. Fresh spinach gives the best texture.
