Ingredients
  

  • 1 lb flank or sirloin steak
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 0.75 tsp salt
  • 0.5 tsp black pepper
  • 2 cups cooked rice
  • 2 avocados sliced
  • 1 cup cherry tomatoes halved
  • 0.25 cup red onion thinly sliced
  • 1 cup fresh cilantro
  • 0.5 cup Greek yogurt or sour cream
  • 2 tbsp lime juice fresh
  • 1 clove garlic
  • 2 tbsp olive oil

Equipment

  • Skillet or grill pan
  • Blender or food processor
  • Knife

Method
 

  1. Season steak with oil, garlic powder, paprika, salt, and pepper.
  2. Cook steak over medium-high heat 4–6 minutes per side.
  3. Rest steak 5 minutes, then slice against the grain.
  4. Blend cilantro sauce ingredients until smooth.
  5. Assemble bowls with rice, steak, avocado, and vegetables.
  6. Drizzle with cilantro sauce and serve.

Notes

Add avocado and sauce just before serving for best texture.
