Ingredients
  

Chicken & Glaze
  • 4-6 chicken thighs boneless, skinless
  • 1 cup apple cider
  • 2 tbsp Dijon mustard
  • 2 tbsp honey
  • 2 cloves garlic minced
  • 2 tbsp olive oil
Autumn Slaw
  • 2 cups green cabbage shredded
  • 1 cup red cabbage shredded
  • 1 large carrot shredded
  • 1 apple julienned
  • 2 tbsp apple cider vinegar
  • 1 tbsp honey
  • 2 tbsp olive oil

Method
 

  1. Preheat oven to 400°F (200°C) if roasting. Pat chicken dry and season with salt and pepper.
  2. Heat olive oil in skillet over medium-high heat. Sear chicken thighs 3–4 minutes per side until golden brown.
  3. Whisk apple cider, Dijon mustard, honey, and garlic. Pour over chicken and simmer 2–3 minutes.
  4. Bake or simmer chicken until internal temperature reaches 165°F (74°C) and glaze thickens, 15–20 minutes.
  5. Combine green cabbage, red cabbage, carrot, and apple in a large bowl.
  6. Whisk apple cider vinegar, honey, olive oil, salt, and pepper; pour over slaw and toss to combine.
  7. Remove chicken from heat, rest 5 minutes. Spoon extra glaze over chicken and serve with slaw.

Notes

Adjust glaze sweetness or acidity to taste. Slaw is best tossed just before serving.
