- Preheat oven to 400°F (200°C) if roasting. Pat chicken dry and season with salt and pepper.
- Heat olive oil in skillet over medium-high heat. Sear chicken thighs 3–4 minutes per side until golden brown.
- Whisk apple cider, Dijon mustard, honey, and garlic. Pour over chicken and simmer 2–3 minutes.
- Bake or simmer chicken until internal temperature reaches 165°F (74°C) and glaze thickens, 15–20 minutes.
- Combine green cabbage, red cabbage, carrot, and apple in a large bowl.
- Whisk apple cider vinegar, honey, olive oil, salt, and pepper; pour over slaw and toss to combine.
- Remove chicken from heat, rest 5 minutes. Spoon extra glaze over chicken and serve with slaw.
Notes
Adjust glaze sweetness or acidity to taste. Slaw is best tossed just before serving.
