Ingredients
  

  • 2 cups all-purpose flour
  • 0.5 tsp baking powder
  • 0.5 tsp baking soda
  • 0.5 tsp salt
  • 0.75 cup unsalted butter softened
  • 0.5 cup granulated sugar
  • 0.5 cup brown sugar packed
  • 2 eggs large
  • 1 tsp vanilla extract
  • 3 tbsp strawberry gelatin powder
  • 0.75 cup white chocolate chips optional
Strawberry Crunch Topping
  • 20 vanilla sandwich cookies crushed
  • 1 cup freeze-dried strawberries crushed
  • 4 tbsp unsalted butter melted

Equipment

  • Mixing bowls

Method
 

  1. Preheat oven and prepare baking sheets.
  2. Mix dry ingredients together.
  3. Cream butter and sugars, then add eggs and vanilla.
  4. Add strawberry gelatin powder.
  5. Combine dry and wet ingredients, fold in chips.
  6. Bake cookies until edges are set.
  7. Prepare strawberry crunch topping.
  8. Press topping onto cooled cookies.

Notes

Add crunch topping after cookies cool for best texture.
