- Preheat oven to 350°F and line baking sheets with parchment paper.
- Cream butter, brown sugar, and granulated sugar until fluffy.
- Add eggs and vanilla extract, mixing well.
- Whisk oats, flour, baking soda, salt, and cinnamon separately, then combine with wet ingredients.
- Scoop dough, flatten slightly, and bake for 10–12 minutes.
- Cool completely before preparing icing.
- Whisk powdered sugar, freeze-dried strawberries, vanilla, and milk until smooth.
- Dip or drizzle cookies with icing, garnish, and let set before serving.
Notes
Freeze-dried strawberries provide the best real strawberry flavor without thinning the icing too much.
