Ingredients
  

Oatmeal Cookies
  • 1 cup unsalted butter softened
  • 0.75 cup brown sugar packed
  • 0.5 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1.5 cups old-fashioned rolled oats
  • 1.5 cups all-purpose flour
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
Strawberry Icing
  • 2 cups powdered sugar
  • 0.25 cup freeze-dried strawberries crushed
  • 2-3 tbsp milk
  • 0.5 tsp vanilla extract
  • extra strawberry crumbs for garnish

Method
 

  1. Preheat oven to 350°F and line baking sheets with parchment paper.
  2. Cream butter, brown sugar, and granulated sugar until fluffy.
  3. Add eggs and vanilla extract, mixing well.
  4. Whisk oats, flour, baking soda, salt, and cinnamon separately, then combine with wet ingredients.
  5. Scoop dough, flatten slightly, and bake for 10–12 minutes.
  6. Cool completely before preparing icing.
  7. Whisk powdered sugar, freeze-dried strawberries, vanilla, and milk until smooth.
  8. Dip or drizzle cookies with icing, garnish, and let set before serving.

Notes

Freeze-dried strawberries provide the best real strawberry flavor without thinning the icing too much.
