  • 1 cup mashed sweet potato cooked
  • 1 cup cornmeal
  • 1 cup all-purpose flour
  • 1 tbsp baking powder
  • 0.5 tsp salt
  • 0.5 cup brown sugar packed
  • 0.25 cup honey
  • 0.5 cup unsalted butter melted
  • 2 eggs large
  • 0.75 cup milk

Method
 

  1. Preheat oven to 350°F (175°C) and grease baking dish.
  2. Whisk dry ingredients together in a large bowl.
  3. Mix sweet potato, butter, sugar, honey, eggs, and milk until smooth.
  4. Fold wet ingredients into dry ingredients until just combined.
  5. Bake for 28–32 minutes until golden and set.
