Ingredients
  

Stew
  • 2 lbs beef chuck cubed
  • 2 tbsp olive oil
  • 1 onion diced
  • 3 cloves garlic minced
  • 3 carrots sliced
  • 2 apples peeled and diced
  • 0.75 cup dried cranberries
  • 3 cups beef broth
  • 1 cup apple cider

Method
 

  1. Brown beef in batches and set aside.
  2. Sauté onion, carrots, and garlic.
  3. Stir in tomato paste and deglaze with cider.
  4. Add remaining ingredients and simmer until tender.
