Method
- Whisk marinade ingredients in a bowl. Add chicken and marinate 30+ minutes.
- Heat oil in skillet or grill. Cook chicken 5-7 minutes per side until done.
- Caramelize pineapple chunks in pan 3-4 minutes.
- Reduce reserved marinade to sauce. Slice chicken and toss in sauce.
- Warm tortillas. Assemble with chicken, pineapple, and toppings.
- Serve with lime wedges and extra salsa.
