Ingredients
  

Chicken Marinade
  • 1.5 lbs boneless skinless chicken thighs
  • 1 cup pineapple juice from fresh pineapple
  • 3 tbsp honey
  • 2 tbsp lime juice
  • 2 tbsp soy sauce
  • 2 cloves garlic minced
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 0.5 tsp smoked paprika
  • 0.5 tsp cayenne pepper adjust to taste
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Other
  • 1 cup fresh pineapple chunks
  • 3 tbsp olive oil divided
  • 8 small corn tortillas

Equipment

  • Large bowl
  • Skillet or grill
  • Tongs
  • Cutting board

Method
 

  1. Whisk marinade ingredients in a bowl. Add chicken and marinate 30+ minutes.
  2. Heat oil in skillet or grill. Cook chicken 5-7 minutes per side until done.
  3. Caramelize pineapple chunks in pan 3-4 minutes.
  4. Reduce reserved marinade to sauce. Slice chicken and toss in sauce.
  5. Warm tortillas. Assemble with chicken, pineapple, and toppings.
  6. Serve with lime wedges and extra salsa.

Notes

Use fresh pineapple for best results. Adjust spice to preference.
