Ingredients
  

Crackers
  • 12 sheets filo dough thawed
  • 8 oz brie cheese cut into small cubes
  • 0.75 cup cranberry sauce whole berry
  • 0.5 cup unsalted butter melted
  • 1 tbsp fresh rosemary optional, finely chopped
  • 1 tsp flaky salt optional for topping

Method
 

  1. Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Keep filo dough covered with a damp towel to prevent drying.
  3. Layer three sheets of filo, brushing each with melted butter.
  4. Cut layered sheets into 3x4 inch rectangles.
  5. Place a cube of brie and 1/2 tsp cranberry sauce at one end of each rectangle.
  6. Roll into cracker shapes, folding in the sides.
  7. Brush the tops with more melted butter.
  8. Bake 12–15 minutes until golden and crisp.
  9. Cool 3 minutes before serving. Sprinkle flaky salt and rosemary if desired.

Notes

Great make-ahead appetizer; freeze before baking and cook from frozen.
