Ingredients
  

  • 4 cups green cabbage shredded
  • 2 cups purple cabbage shredded
  • 1 cup carrots shredded
  • 2 apples julienned
  • 0.75 cup dried cranberries
  • 0.5 cup pecans chopped
  • 0.25 cup olive oil
  • 2 tbsp apple cider vinegar
  • 2 tbsp maple syrup
  • 1 tsp Dijon mustard
  • 0.5 tsp salt
  • 0.25 tsp black pepper

Equipment

  • Large mixing bowl
  • Small bowl or jar

Method
 

  1. Combine cabbage, carrots, apples, cranberries, and pecans in a bowl.
  2. Whisk together olive oil, vinegar, maple syrup, Dijon, salt, and pepper.
  3. Pour dressing over slaw and toss to coat.
  4. Rest briefly before serving.

Notes

Add apples just before serving for best texture.
