- Heat olive oil in a large pot over medium heat. Add ground turkey and cook until browned, about 5-7 minutes. Drain excess fat.
- Add diced onion, garlic, red bell pepper, green bell pepper, and zucchini. Sauté for 4-5 minutes until softened.
- Stir in chili powder, cumin, smoked paprika, oregano, cayenne, salt, and pepper. Cook for 1-2 minutes.
- Add diced tomatoes, tomato sauce, kidney beans, chicken broth, and optional corn. Stir to combine.
- Bring to a boil, then reduce heat to low. Simmer covered for 20-25 minutes, stirring occasionally.
- Taste and adjust seasonings. Serve hot with desired toppings.
Notes
Store leftovers in the fridge for up to 4 days or freeze for 3 months. Flavors improve overnight.
