Ingredients
  

Donut Dough
  • 1.25 cups whole milk warmed
  • 2.25 tsp instant yeast
  • 0.33 cup granulated sugar
  • 2 large eggs
  • 6 tbsp unsalted butter melted
  • 1 tsp salt
  • 1 tsp vanilla extract
  • 4.5 cups all-purpose flour
Frying
  • 1-2 quarts vegetable oil for frying
Glaze
  • 3 cups powdered sugar sifted
  • 0.33-0.5 cup milk or heavy cream
  • 1 tsp vanilla extract
  • 1 pinch salt

Equipment

  • Stand mixer or large bowl
  • Donut cutter
  • Deep pot or Dutch oven
  • Candy/oil thermometer
  • Wire rack

Method
 

  1. Activate yeast in warm milk with a bit of sugar; let foam 5-10 min.
  2. Mix in sugar, eggs, butter, salt, vanilla.
  3. Add flour gradually; knead 5-7 min until smooth.
  4. Rise covered 1-1.5 hours until doubled.
  5. Roll out, cut donuts, rise again 30-45 min.
  6. Fry in 350-375°F oil 1-2 min per side; drain.
  7. Whisk glaze ingredients until smooth.
  8. Dip warm donuts in glaze; let set on rack.

Notes

Best fresh. Monitor oil temp closely. Glaze while warm for best adhesion.
