Ingredients
  

Green Beans
  • 1.5 lbs fresh green beans trimmed and halved
  • 1 tsp salt for blanching water
Creamy Mushroom Sauce
  • 1 tbsp olive oil
  • 1 onion diced
  • 3 cups sliced mushrooms
  • 3 cloves garlic minced
  • 1 cup vegetable broth low sodium
  • 1 cup Greek yogurt plain
  • 1 tbsp whole-wheat flour
  • 0.5 tsp salt
  • 0.5 tsp black pepper
  • 0.5 tsp thyme dried
  • 0.25 tsp paprika
Crispy Topping
  • 0.5 cup whole-wheat breadcrumbs
  • 0.25 cup Parmesan optional
  • 1 tbsp olive oil
  • 0.5 tsp garlic powder
  • 0.5 tsp onion powder
  • salt pinch

Method
 

  1. Blanch green beans in salted boiling water for 4–5 minutes; transfer to ice water and drain.
  2. Sauté onions and mushrooms in olive oil until browned; add garlic.
  3. Stir in flour, then slowly add broth and cook until thickened.
  4. Remove from heat; stir in Greek yogurt, salt, pepper, thyme, and paprika.
  5. Mix breadcrumbs, Parmesan, olive oil, garlic powder, onion powder, and salt for topping.
  6. Preheat oven to 375°F (190°C). Combine green beans with sauce and transfer to casserole dish.
  7. Top with breadcrumb mixture and bake for 20–25 minutes until golden.
  8. Let rest 5 minutes before serving.

Notes

For extra creaminess, add 2 tbsp cream cheese or additional Greek yogurt.
