  • 1 baguette sliced
  • 1 tbsp olive oil
  • 1 clove garlic
  • 1 cup cherry tomatoes halved
  • 1 cup mozzarella balls
  • 2 peaches sliced
  • 0.5 cup mixed olives
  • 2 tbsp balsamic glaze
  • 1 tbsp extra virgin olive oil for drizzle
  • 1 pinch sea salt
  • 1 pinch black pepper
  • 1 handful fresh basil leaves

Method
 

  1. Preheat oven to 375°F and toast baguette slices brushed with olive oil for 8–10 minutes.
  2. Rub toasted crostini lightly with garlic.
  3. Slice peaches and halve cherry tomatoes.
  4. Arrange crostini, tomatoes, peaches, mozzarella, and olives on a serving platter.
  5. Scatter fresh basil leaves across the platter.
  6. Drizzle balsamic glaze and olive oil over the ingredients.
  7. Season lightly with salt and black pepper before serving.
