Ingredients
  

Fish
  • 4 tilapia fillets
  • 0.5 cup all-purpose flour
  • salt to taste
  • black pepper to taste
  • 3 tbsp olive oil
  • 3 tbsp unsalted butter
  • 3 cloves garlic minced
  • 0.33 cup lemon juice fresh
  • 0.25 cup chicken broth
  • 2 tbsp capers drained
  • 2 tbsp parsley chopped

Method
 

  1. Season and dredge tilapia lightly in flour.
  2. Cook in olive oil until golden on both sides.
  3. Remove fish and melt butter in pan.
  4. Add garlic, then lemon juice and broth.
  5. Stir in capers and simmer.
  6. Return fish and coat with sauce.
  7. Garnish and serve.

Notes

Do not overcook tilapia; it cooks quickly and should remain tender.
