Ingredients
  

Brownie Base
  • 1 cup unsalted butter melted
  • 1.5 cups granulated sugar
  • 0.5 cup brown sugar
  • 3 eggs large
  • 2 tsp vanilla extract
  • 0.75 cup unsweetened cocoa powder
  • 1 tsp espresso powder
  • 1 cup all-purpose flour
  • 0.5 tsp salt
  • 0.5 tsp baking powder
  • 0.75 cup dark chocolate chips
Coffee Syrup
  • 0.5 cup brewed espresso
  • 2 tbsp sugar
  • 1 tsp coffee liqueur optional
Mascarpone Cream
  • 1 cup mascarpone cheese
  • 1 cup heavy whipping cream
  • 0.5 cup powdered sugar
  • 1 tsp vanilla extract

Method
 

  1. Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. Whisk melted butter with granulated sugar and brown sugar until smooth.
  3. Add eggs one at a time, mixing well, then stir in vanilla.
  4. Mix cocoa powder, flour, salt, baking powder, and espresso powder into the batter.
  5. Fold in chocolate chips and spread batter into prepared pan.
  6. Bake 22–25 minutes until edges are set. Cool completely.
  7. Mix espresso and sugar to create coffee syrup and brush lightly over brownies.
  8. Beat mascarpone, then fold in whipped cream, powdered sugar, and vanilla.
  9. Spread mascarpone cream over brownies and dust with cocoa powder.
  10. Chill for 1 hour before slicing and serving.
