Method
- Preheat oven to 350°F (175°C) and line a baking pan with parchment paper.
- Whisk melted butter with granulated sugar and brown sugar until smooth.
- Add eggs one at a time, mixing well, then stir in vanilla.
- Mix cocoa powder, flour, salt, baking powder, and espresso powder into the batter.
- Fold in chocolate chips and spread batter into prepared pan.
- Bake 22–25 minutes until edges are set. Cool completely.
- Mix espresso and sugar to create coffee syrup and brush lightly over brownies.
- Beat mascarpone, then fold in whipped cream, powdered sugar, and vanilla.
- Spread mascarpone cream over brownies and dust with cocoa powder.
- Chill for 1 hour before slicing and serving.
