Ingredients
  

  • 1 lb turkey breast or thighs cut into bite-sized pieces
  • 1.5 cups long-grain rice rinsed
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2 tbsp olive oil
  • 2.5 cups chicken or turkey broth
  • 1 tsp paprika
  • 0.5 tsp cumin
  • salt and pepper to taste

Method
 

  1. Rinse rice and prepare vegetables and turkey.
  2. Heat olive oil, sear turkey until browned, then remove.
  3. Sauté onion, garlic, and bell pepper until softened.
  4. Add rice and spices, toast lightly.
  5. Pour in broth, return turkey to the pan.
  6. Simmer covered on low heat until rice is tender and liquid absorbed.
  7. Fluff rice, garnish, and serve hot.

Notes

Do not stir too often to keep rice fluffy. Adjust seasoning to taste.
