Ingredients
  

Turkey
  • 1 turkey breast 2–3 lbs, butterflied
  • 1 tbsp olive oil
  • 1 tsp salt
  • 0.5 tsp black pepper
Sausage Stuffing
  • 1 lb Italian sausage
  • 1 onion diced
  • 3 cloves garlic minced
  • 1 cup panko breadcrumbs
  • 2 tbsp unsalted butter
  • 1 cup spinach chopped
  • 1 tbsp rosemary fresh, chopped
  • 1 tbsp thyme fresh, chopped
  • 2 tbsp parsley fresh, chopped
  • 0.5 tsp salt
  • 0.25 tsp black pepper
Roasting
  • 2 tbsp melted butter or olive oil

Method
 

  1. Butterfly and pound turkey breast to even thickness; season with salt and pepper.
  2. Cook sausage in skillet until browned; add onions and garlic.
  3. Add butter, spinach, breadcrumbs, and herbs; season and let cool slightly.
  4. Spread stuffing over turkey, leaving a border; roll into a tight log.
  5. Tie roulade with kitchen twine and brush with melted butter.
  6. Roast at 375°F (190°C) for 60–75 minutes until internal temp is 165°F (74°C).
  7. Rest for 10 minutes, slice into spirals, garnish, and serve.

Notes

Add apples or cranberries to the stuffing for a festive variation.
