Turkish Eggs (Çılbır)

Poached eggs served over garlicky yogurt and topped with spiced butter.

Ingredients
  

  • 1 cup Greek yogurt full-fat
  • 1 clove garlic minced
  • 2 eggs
  • 1 tbsp white vinegar
  • 3 tbsp unsalted butter
  • 1 tsp Aleppo pepper or paprika

Equipment

  • Slotted spoon

Method
 

  1. Mix yogurt with garlic and salt; spread onto plates.
  2. Poach eggs in gently simmering water with vinegar.
  3. Melt butter and stir in pepper.
  4. Place eggs on yogurt and drizzle with butter.

Notes

Serve immediately with warm bread.
