  • 2 cups cherry tomatoes halved
  • 1 can marinated artichoke hearts drained and halved
  • 0.25 cup red onion thinly sliced
  • 0.25 cup Kalamata olives pitted and halved
  • 0.25 cup fresh basil torn
  • 0.25 cup Parmesan cheese shaved
Dressing
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp red wine vinegar
  • 1 clove garlic minced
  • salt to taste
  • black pepper to taste

Method
 

  1. Prepare all vegetables by chopping and slicing as needed.
  2. Combine tomatoes, artichokes, onion, olives, and basil in a bowl.
  3. Whisk together olive oil, lemon juice, vinegar, garlic, salt, and pepper.
  4. Pour dressing over salad and toss gently.
  5. Top with Parmesan cheese and let sit for 10 minutes before serving.
