Ingredients
  

Salad Base
  • 4 cups mixed greens baby spinach, arugula, or spring mix
  • 1 cup strawberries hulled and sliced
  • 0.5 cup heart-shaped beet slices use cookie cutter
  • 0.5 cup radishes thinly sliced
  • 0.25 cup crumbled feta cheese
  • 2 tbsp nuts optional
  • 2 tbsp seeds optional
  • 3 tbsp balsamic vinaigrette or preferred light vinaigrette
  • to taste salt and pepper

Method
 

  1. Wash and dry greens. Slice radishes thinly and cut beet slices into heart shapes.
  2. Hull and slice strawberries.
  3. Arrange mixed greens in a large salad bowl.
  4. Layer strawberries, heart-shaped beets, and radishes evenly over the greens.
  5. Sprinkle crumbled feta and optional nuts or seeds on top.
  6. Drizzle with balsamic vinaigrette and season with salt and freshly cracked pepper.
  7. Toss gently and serve immediately for best freshness.
