Ingredients
  

Salad
  • 4 beets roasted or boiled, peeled
  • 1.5 cups cucumbers sliced
  • 0.75 cup feta cheese crumbled
  • 2 tbsp fresh dill chopped
Dressing
  • 3 tbsp olive oil extra virgin
  • 1.5 tbsp lemon juice fresh
  • 0.5 tsp salt
  • 0.25 tsp black pepper freshly ground

Method
 

  1. Cook beets until tender, cool, peel, and slice.
  2. Slice cucumbers and pat dry.
  3. Combine beets and cucumbers in a bowl.
  4. Add feta cheese and fresh dill.
  5. Whisk olive oil, lemon juice, salt, and pepper.
  6. Drizzle dressing over salad and toss gently.
  7. Chill briefly before serving.

Notes

Add feta just before serving if making ahead for best texture.
